Brazilian Peanut Cake with Condensed Milk Glaze
Ingredients
- 4 eggs
- 1 1/2 cups sugar
- 1 cup milk
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 1/2 cups roasted and ground peanuts
- 2 cans sweetened condensed milk
- 1/2 cup heavy cream
- Ground peanuts, for decoration
Preparation
Blend sugar, milk, egg yolks, flour, and peanuts in a blender until smooth
Beat egg whites until stiff peaks form, then gently fold into the batter
Grease a ring mold and pour in the batter
Bake in a preheated oven until golden brown
Cook sweetened condensed milk in a saucepan over low heat, stirring constantly, until thickened
Remove from heat and stir in heavy cream
Unmold the cake once cooled slightly
Spread the condensed milk topping over the cake
Sprinkle with ground peanuts
