Fluffy Lemon Cake with Lemon Glaze

Ingredients

Batter

  • 4 eggs
  • 1/2 cup milk (120ml)
  • 1/2 cup vegetable oil (120ml)
  • 1/2 cup fresh lemon juice (120ml)
  • 1 1/2 cups sugar
  • 2 cups all-purpose flour, sifted
  • Zest of 3 lemons
  • 1 tablespoon baking powder

Topping

  • 1 (14 oz) can sweetened condensed milk (395g)
  • Juice of 4 lemons, strained
  • 100g heavy cream

Preparation

Batter

  1. Blend eggs, milk, oil, lemon juice, and sugar in a blender for 1 minute

  2. Transfer the mixture to a bowl and gradually add the flour, mixing gently

  3. Add the lemon zest and mix

  4. Add the baking powder and mix gently

  5. Pour the batter into a greased and floured cake pan

  6. Bake in a preheated oven at 180Β°C (350Β°F) for about 40 minutes, or until a knife inserted comes out clean

Topping

  1. Mix sweetened condensed milk, lemon juice, and heavy cream with a spoon and pour over the cake
