Fluffy Lemon Cake with Lemon Glaze
Ingredients
Batter
- 4 eggs
- 1/2 cup milk (120ml)
- 1/2 cup vegetable oil (120ml)
- 1/2 cup fresh lemon juice (120ml)
- 1 1/2 cups sugar
- 2 cups all-purpose flour, sifted
- Zest of 3 lemons
- 1 tablespoon baking powder
Topping
- 1 (14 oz) can sweetened condensed milk (395g)
- Juice of 4 lemons, strained
- 100g heavy cream
Preparation
Batter
Blend eggs, milk, oil, lemon juice, and sugar in a blender for 1 minute
Transfer the mixture to a bowl and gradually add the flour, mixing gently
Add the lemon zest and mix
Add the baking powder and mix gently
Pour the batter into a greased and floured cake pan
Bake in a preheated oven at 180Β°C (350Β°F) for about 40 minutes, or until a knife inserted comes out clean
Topping
Mix sweetened condensed milk, lemon juice, and heavy cream with a spoon and pour over the cake
