Easy Oatmeal Cookies with Nuts and Add-Ins
Ingredients
- 80-100 g flour (adjust for consistency)
- 150 g oatmeal flakes
- 60 g butter (82.5% fat, room temperature)
- 150 ml sour cream (10% fat)
- 45-60 g sugar (to taste)
- 1 chicken egg
- 0.5 tbsp honey (optional)
- 1/3 tsp baking soda
- A handful of nuts or dried fruits (e.g., almonds, cashews, walnuts, pecans, coconut flakes)
Preparation
Preheat the oven to 180 degrees Celsius.
In a bowl, rub butter with sugar.
Add egg, sour cream, and honey, and mix well.
Grind oatmeal flakes in a blender and add to the mixture.
Sift flour with baking soda and gradually add to the dough, mixing until it is not too sticky or stiff.
Add coarsely chopped nuts, dried fruits, or chocolate and mix to distribute evenly.
Line a baking sheet with parchment paper.
Form small balls and place them on the baking sheet, not too close together.
Optionally, sprinkle with oatmeal flakes on top.
Bake for 15-20 minutes, adjusting for your oven.
Notes
These cookies are delicious hot or cold and pair well with tea or coffee.
The yield is approximately 18 cookies, depending on size.
