Flaky Layered Cheese Pastry

Ingredients

  • 1 cup warm water (200 ml)
  • 1 teacup yogurt (100 ml)
  • 1 teacup vegetable oil (100 ml)
  • 10 g instant yeast or dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 eggs
  • 5 cups flour (add gradually)

For dough greasing

  • 100 g butter

For filling

  • 200 g kasar cheese

Preparation

  1. Knead a soft, non-sticky dough, then without waiting, divide into 4 equal parts, shape into balls, cover, and let rest for 10 minutes.

  2. Roll out each ball to 40-45 cm in diameter, stack them on top of each other, and grease each layer well with butter.

  3. Cut the stack into 1-inch wide strips and roll each strip into a log shape.

  4. Place the logs on a suitable tray, cover, and refrigerate for 10-15 minutes.

  5. Roll out each log to the size of a tea saucer, add kasar cheese, fold it, and arrange on the baking tray.

  6. Cover and let rise for 20-30 minutes.

  7. Brush with egg yolk, then bake in a preheated oven at 180°C until golden and cooked through.
