Traditional Turkish Karaköy Cheese Pastry

Ingredients

  • 500 g flour
  • 250 g butter or margarine at room temperature
  • 1 tea glass water
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 packet fresh yeast
  • 2 eggs (one yolk reserved for topping)

Filling

  • 1 bowl white cheese

Preparation

  1. Mix all ingredients except flour in a suitable bowl and stir well.

  2. Gradually add flour and knead to form a soft dough.

  3. Take mandarin-sized pieces of dough, flatten slightly, place cheese in the center, close and shape into rounds.

  4. Place on a baking tray lined with parchment paper, press down with a glass to flatten, brush with egg yolk, and shape with a fork or tool.

  5. Let the poğaça rise for 30 minutes.

  6. Preheat the oven to 70°C and let them sit in the oven for 10 minutes, then bake at 180°C until done.

Tips

  1. Doubling the quantities yields approximately 3 trays of poğaça.
