Healthy Salmon Fishcakes with Sweet Potatoes

Ingredients

  • 2 medium sweet potatoes
  • 2 tins of salmon
  • Mixed dried herbs
  • Black pepper
  • Polenta

Preparation

  1. Peel, chop and mash the sweet potato.

  2. Mix in the drained, tinned salmon.

  3. Add a pinch of herbs and season.

  4. Put the polenta on a plate.

  5. Take spoons of the mix and roll into balls then flatten slightly.

  6. Roll in the polenta and place on a greased tray.

  7. Bake at Gas Mark 5 for 20-30 mins.
