Healthy Salmon Fishcakes with Sweet Potatoes
Ingredients
- 2 medium sweet potatoes
- 2 tins of salmon
- Mixed dried herbs
- Black pepper
- Polenta
Preparation
Peel, chop and mash the sweet potato.
Mix in the drained, tinned salmon.
Add a pinch of herbs and season.
Put the polenta on a plate.
Take spoons of the mix and roll into balls then flatten slightly.
Roll in the polenta and place on a greased tray.
Bake at Gas Mark 5 for 20-30 mins.
