Simple Cheesy Vegetarian Carbonara
Ingredients
- 80g mafalde pasta
- veggie chicken flavour stock
- half pack Italian deli ham style slices
- handful of veggie bacon pieces
- Sizolla spray oil
- a few turns of cracked black pepper
- spinach for serving
Sauce components
- 3 extra light cheese triangles
- a little pasta stock
- 15g Italian hard cheese
Preparation
Cook the pasta in veggie chicken flavour stock.
Make a sauce using the cheese triangles, a little pasta stock, and Italian hard cheese.
Cook the veggie bacon pieces in spray oil until crispy.
Stir all ingredients together with the pasta and sauce.
Serve on a bed of spinach.

Using spray oil keeps the bacon crispy without drying it out.
