Sweet Potato Black Bean Burgers
Ingredients
- 1 cup black beans
- 1 sweet potato
- 2 tablespoons almond flour
- 2 tablespoons flax seeds
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- sea salt and black pepper to taste
- 1 tablespoon olive oil
Preparation
Preheat oven to 415°F and roast sweet potato for 30 minutes with oil, salt, and pepper to prepare 1 cup roasted sweet potato.
Preheat oven to 375°F.
Mash 1 cup black beans and 1 cup roasted sweet potato in a large bowl.
Add 2 tablespoons almond flour, 2 tablespoons flax seeds, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon chili powder, sea salt, black pepper, and 1 tablespoon olive oil to the mixture.
Mix well and form into patties, using an ice cream scoop for best results.
Drizzle the patties with olive oil.
Bake for 15 minutes at 375°F.
Optionally, broil for 1 minute for extra crispiness.
Serve with a simple salad and spicy mayo.
