Ginger Biscuits with Pine Nuts

Ingredients

  • 1/2 cup softened butter
  • 1/3 cup fine-grained sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/8 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 cup pine nuts

Preparation

  1. Set the rack in the middle of the oven and preheat the oven to 180°C.

  2. Prepare baking sheets with short edges and line them with parchment paper.

  3. In the mixer bowl, place the butter and sugar, attach the paddle attachment, and mix on medium speed for 3 minutes.

  4. Add the egg yolk and vanilla, then mix on medium speed for a minute until the yolk is incorporated.

  5. Add the flour, salt, and ginger, attach the mixing beater, and mix on low speed until the dough forms.

  6. Divide the dough into 20 pieces, shape each into a smooth ball with your palms, and place them on the prepared sheets, leaving a 3-inch distance between each.

  7. Using the bottom of a glass or bottle, press the balls to form disks about 2 inches in diameter, then sprinkle with pine nuts and press lightly to adhere.

  8. Bake for 10 to 12 minutes until the bottom is golden brown.

  9. Remove from the oven and let cool completely in the trays before serving.
