Melt In Your Mouth Matcha Cookies
Ingredients
- 1/2 cup coconut butter
- 1/2 cup light agave
- 1 tsp vanilla extract
- 1 1/2 cup oat flour
- 2 tsp baking powder
- 1 tbsp matcha powder
- Pinch of salt
Preparation
Preheat your oven to 350 ºF
Melt the coconut butter and agave, then add the vanilla extract and stir well
In a separate bowl, combine the baking powder, matcha, oat flour, and salt, and mix until fully incorporated
Combine both mixtures to form a firm dough
Place the cookie dough between two pieces of wax paper and roll it to a quarter inch thickness
Use a star-shaped cookie cutter to cut out the cookies
Line a baking sheet with parchment paper and arrange the cookies on it
Bake for 10 to 12 minutes
