Melt In Your Mouth Matcha Cookies

Ingredients

  • 1/2 cup coconut butter
  • 1/2 cup light agave
  • 1 tsp vanilla extract
  • 1 1/2 cup oat flour
  • 2 tsp baking powder
  • 1 tbsp matcha powder
  • Pinch of salt

Preparation

  1. Preheat your oven to 350 ºF

  2. Melt the coconut butter and agave, then add the vanilla extract and stir well

  3. In a separate bowl, combine the baking powder, matcha, oat flour, and salt, and mix until fully incorporated

  4. Combine both mixtures to form a firm dough

  5. Place the cookie dough between two pieces of wax paper and roll it to a quarter inch thickness

  6. Use a star-shaped cookie cutter to cut out the cookies

  7. Line a baking sheet with parchment paper and arrange the cookies on it

  8. Bake for 10 to 12 minutes
