No Bake Chocolate Chip Cookie Bites

Ingredients

  • 1/2 cup nuts of choice (pumpkin, cashews, walnuts are best)
  • 1/3 cup sunflower butter
  • 1/4 cup almond flour
  • 2 tbsp almond milk
  • 1/8 cup GF rolled oats
  • 3 pre-soaked medjool dates
  • 1 tsp vanilla
  • Dash of sea salt
  • Dash of nutmeg
  • 1/4 cup vegan dark chocolate chips

Preparation

  1. Blend 1/2 cup nuts of choice in a food processor.

  2. Add 1/3 cup sunflower butter, 1/4 cup almond flour, 2 tbsp almond milk, 1/8 cup GF rolled oats, 3 pre-soaked medjool dates, 1 tsp vanilla, dash of sea salt, and dash of nutmeg, then blend until a thick dough forms.

  3. Transfer the dough to a bowl and mix in 1/4 cup vegan dark chocolate chips.

  4. Spoon the mixture onto a plate or tray using a cookie dough scooper.

  5. Refrigerate until the cookie bites are set.
