No Bake Chocolate Chip Cookie Bites
Ingredients
- 1/2 cup nuts of choice (pumpkin, cashews, walnuts are best)
- 1/3 cup sunflower butter
- 1/4 cup almond flour
- 2 tbsp almond milk
- 1/8 cup GF rolled oats
- 3 pre-soaked medjool dates
- 1 tsp vanilla
- Dash of sea salt
- Dash of nutmeg
- 1/4 cup vegan dark chocolate chips
Preparation
Blend 1/2 cup nuts of choice in a food processor.
Add 1/3 cup sunflower butter, 1/4 cup almond flour, 2 tbsp almond milk, 1/8 cup GF rolled oats, 3 pre-soaked medjool dates, 1 tsp vanilla, dash of sea salt, and dash of nutmeg, then blend until a thick dough forms.
Transfer the dough to a bowl and mix in 1/4 cup vegan dark chocolate chips.
Spoon the mixture onto a plate or tray using a cookie dough scooper.
Refrigerate until the cookie bites are set.
