No-Bake Vegan Oreo-Style Cookies

Ingredients

Dough

  • 80 g oat flour
  • 3 tablespoons coconut oil
  • 30 g dark chocolate
  • 5 g activated charcoal (optional)
  • 1 tablespoon cocoa powder

Filling

  • 7 g coconut oil
  • 30 g powdered erythritol

Preparation

  1. Melt the chocolate and coconut oil and mix them together.

  2. In a bowl, stir together the oat flour, activated charcoal if using, and cocoa powder.

  3. Slowly stir the liquid mixture into the dry ingredients.

  4. Drop teaspoonfuls of the mixture to form round circles on a plate lined with baking paper or aluminum foil.

  5. Chill in the refrigerator.

  6. Meanwhile, mix the coconut oil with the powdered erythritol to make the filling.

  7. Once the cookies have hardened, sandwich the filling between two cookies and chill again.

  8. Store the cookies in the refrigerator.
