Anise-Flavored Sham Fried Donuts

Ingredients

  • 2 cups water
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1 tablespoon ground anise
  • 2 cups flour
  • 5 medium eggs
  • 5 medium egg yolks

For frying

  • Corn oil

For serving

  • Sugar syrup

Preparation

  1. In a medium-sized pot with a thick bottom, place the water and butter. Put the pot on medium heat until the water boils vigorously.

  2. On a piece of butter paper or in a deep plate, sift the salt, anise, and flour.

  3. Add the flour to the pot. Using a wooden spoon, stir the flour quickly until you get a cohesive dough that separates from the sides of the pot.

  4. Place the dough in a mixer bowl and let it cool for 5 to 7 minutes. Attach the beating attachment. Add an egg and run on medium speed until the egg disappears. Continue adding the remaining eggs gradually while beating until the egg disappears completely. Add the egg yolks and run on medium speed until they disappear.

  5. In a deep frying pan, place an amount of oil so that it is about 2 inches high. Put the pan on medium heat.

  6. Prepare a piping bag fitted with a decorative nozzle about 1/2 inch in size. Place half the dough amount in the bag.

  7. Hold the bag with your left hand. Hold kitchen scissors with your right hand.

  8. Squeeze the bag over the oil to release about 3 cm, then cut with scissors. Repeat the step to fill the pan. Wait until the Sham donuts turn golden, then remove from the pan.

  9. Place the Sham donuts in the syrup for a few seconds, then transfer to a serving plate.
