Apple Roll Cotton Cake
Ingredients
Apple filling
- 7 medium apples
- 1/2 cup sugar (can be reduced if apples are sweet)
- 1 teaspoon cinnamon
Cake batter
- 3 eggs
- 1 cup sugar
- 1/2 cup milk
- 1.5 cups flour
- 1 packet baking powder
- Optional: 1 packet vanilla
Preparation
Peel and grate the apples, add sugar, and cook over medium heat until soft and liquid is absorbed.
Add cinnamon in the last 2-3 minutes and remove from heat.
Spread the apple mixture evenly on parchment paper using a spatula.
In a deep bowl, beat eggs and sugar for 5 minutes until white and fluffy.
Add milk, flour, and baking powder, and mix with a mixer for a few turns.
Pour the batter over the apple mixture and spread evenly.
Bake in a preheated 180°C oven until lightly browned, checking periodically.
Once slightly cooled, remove from tray with paper, place another parchment on top, flip so apple side is up, and carefully roll into a log using the paper.
Place on a serving dish, dust with powdered sugar, slice, and serve.
It can be eaten hot or cold and stored in a covered container.
