Baked Banana Oatmeal
Ingredients
- 3 cups rolled oats
- 3 bananas, 2 mashed and 1 sliced
- 1 cup milk of choice (i love this with coconut milk)
- 1/4 cup coconut oil
- 3 tbsp maple syrup
- 1 tbsp chia seeds stirred into 2 tbsp warm water
- 1 tbsp brown sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp vanilla extract
- a pinch of salt
Preparation
Mix all ingredients together except for the sliced bananas and brown sugar and put into a medium sized lined or greased baking dish
Top with banana slices and sprinkle with brown sugar
Bake in a preheated oven at 350 degrees F for 35 mins
Let cool slightly and cut into squares
