Baked Banana Oatmeal

Ingredients

  • 3 cups rolled oats
  • 3 bananas, 2 mashed and 1 sliced
  • 1 cup milk of choice (i love this with coconut milk)
  • 1/4 cup coconut oil
  • 3 tbsp maple syrup
  • 1 tbsp chia seeds stirred into 2 tbsp warm water
  • 1 tbsp brown sugar
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • a pinch of salt

Preparation

  1. Mix all ingredients together except for the sliced bananas and brown sugar and put into a medium sized lined or greased baking dish

  2. Top with banana slices and sprinkle with brown sugar

  3. Bake in a preheated oven at 350 degrees F for 35 mins

  4. Let cool slightly and cut into squares

  5. If you want to be a little crazy, drizzle some #maplesyrup on top
