Banana Baked Oats

Ingredients

  • 3 ripe bananas
  • 2 cups jumbo whole oats
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp hemp seeds
  • 2 eggs (room temperature)
  • 2 tsp vanilla
  • 1 3/4 cup oat milk
  • 1/3 cup maple syrup
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sugar of your choice (light brown)

Preparation

  1. Preheat the oven to 180°C / 350°F.

  2. In a large bowl, mix oats, cinnamon, baking powder, hemp seeds, and salt.

  3. In another bowl, whisk together eggs, vanilla, oat milk, maple syrup, and olive oil.

  4. Pour the liquid mixture into the oat mixture and stir together.

  5. Peel two bananas, cut them into small pieces, and add to the mix. Stir through.

  6. Pour the mixture into an ovenproof dish.

  7. Peel the last banana, slice it through the middle, and gently place it on top.

  8. Sprinkle almonds and sugar on top.

  9. Bake for 40-45 minutes until the top is golden brown.

  10. If desired, you can give it 5 minutes under a hot grill for a more caramelized top, but watch closely to avoid burning.

  11. Let it cool slightly, serve, and enjoy!
