Pear and Almond Baked Oats

Ingredients

  • 4 pears (3 peeled and cut into small pieces, 1 cut into quarters)
  • 2 cups jumbo whole oats
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 1/3 cup flaked almonds (plus 1 tsp extra)
  • 2 eggs (room temperature)
  • 2 tsp vanilla
  • 1 3/4 cup oat milk
  • 1/3 cup maple syrup
  • 2 tbsp extra virgin olive oil

Preparation

  1. Preheat the oven to 180°C (350°F).

  2. In a large bowl, mix together the oats, ground cinnamon, baking powder, hemp seeds, chia seeds, flaked almonds, and salt.

  3. In another bowl, whisk together the eggs, vanilla, oat milk, maple syrup, and olive oil.

  4. Pour the liquid mixture into the oat mixture and stir everything together.

  5. Add the chopped pears and mix them through the oat mixture.

  6. Pour the mixture into an oven-proof dish.

  7. Place the quartered pear on top.

  8. Sprinkle the extra almonds and a little extra ground cinnamon over the top.

  9. Bake for 40-45 minutes or until the top is golden brown.

  10. Let it cool for a little while, then serve and enjoy.
