Blueberry Truffles with Coconut and Almonds
Ingredients
- 1/4 cup desiccated coconut
- 3/4 cup ground almonds
- 1/4 cup coconut milk
- 2 tbsp coconut oil (melted)
- 1 1/2 tsp of blueberry powder
- White chocolate to melt and dip balls into (optional)
Preparation
Mix all ingredients in a bowl together. (You can use your hands to combine it).
Mould the mix into individual balls and place on baking paper. Leave to chill in the freezer for 10 minutes.
Melt the chocolate and cover the balls. (You can also drizzle it across the top!) Leave to chill in the fridge for an hour (or freezer if you’re impatient like me!) and ENJOY!
If you don’t eat them all in one go, store in the fridge in a sealed container.
