Brazilian Coconut Sweet Bread Rolls
Ingredients
Dough
- 1 egg
- 1/2 cup sugar
- 1/4 cup oil
- 1 tablespoon unsalted margarine
- 1/2 teaspoon salt
- 2 cups warm milk (or water)
- 10g dry yeast
- 1 kg all-purpose flour (approximately)
Filling
- 4 tablespoons margarine
- 1 cup sugar
- 100g shredded coconut
Glaze
- 1 can sweetened condensed milk
- 100ml milk
Preparation
Mix egg, sugar, oil, unsalted margarine, salt, warm milk, and yeast in a bowl, reserving the flour
Gradually add flour until the dough comes off the hands, then knead for about 10 minutes
Let the dough rest until doubled in volume
While the dough rests, prepare the filling by mixing margarine, sugar, and shredded coconut in a bowl and set aside
While the dough rests, prepare the glaze by mixing sweetened condensed milk and milk and set aside
Roll out the dough into a rectangle using a rolling pin
Spread the filling over the entire surface of the dough
Roll up the dough like a Swiss roll
Cut the roll into slices about one finger thick
Arrange the slices on a greased baking pan
Bake in a medium oven until lightly golden on top
Pour the glaze over the hot rolls in the pan
