Brazilian Coconut Sweet Bread Roll
Ingredients
Filling
- 4 teaspoons butter
- 2 cans condensed milk
- 200 g shredded coconut
- 6 teaspoons sugar
Dough
- 5 cups all-purpose flour
- 3 eggs
- 5 tablespoons sugar
- 5 teaspoons oil
- 15 g dry yeast
- 1 cup warm milk
For assembly
- egg yolk
Preparation
Filling
Mix the butter, condensed milk, shredded coconut, and sugar in a saucepan
Stir until thickened and pulls away from the pan
Let cool
Dough
Place the flour in a bowl
Make a well in the center and add the eggs, sugar, oil, and yeast
Mix well and add the warm milk
Stir until a homogeneous dough forms
Add more flour until the dough comes off the hands
Knead the dough well
Place in a floured bowl and cover with plastic wrap
Let rest for 1 hour
Assembly
Take a portion of the dough and roll it out with a rolling pin
Add the filling and roll into a log
Coil the log into a snail shape
Place on a baking sheet and brush with egg yolk
Bake in a preheated oven at 180Β°C for 20 minutes
