Brazilian Coconut Sweet Bread Roll

Ingredients

Filling

  • 4 teaspoons butter
  • 2 cans condensed milk
  • 200 g shredded coconut
  • 6 teaspoons sugar

Dough

  • 5 cups all-purpose flour
  • 3 eggs
  • 5 tablespoons sugar
  • 5 teaspoons oil
  • 15 g dry yeast
  • 1 cup warm milk

For assembly

  • egg yolk

Preparation

Filling

  1. Mix the butter, condensed milk, shredded coconut, and sugar in a saucepan

  2. Stir until thickened and pulls away from the pan

  3. Let cool

Dough

  1. Place the flour in a bowl

  2. Make a well in the center and add the eggs, sugar, oil, and yeast

  3. Mix well and add the warm milk

  4. Stir until a homogeneous dough forms

  5. Add more flour until the dough comes off the hands

  6. Knead the dough well

  7. Place in a floured bowl and cover with plastic wrap

  8. Let rest for 1 hour

Assembly

  1. Take a portion of the dough and roll it out with a rolling pin

  2. Add the filling and roll into a log

  3. Coil the log into a snail shape

  4. Place on a baking sheet and brush with egg yolk

  5. Bake in a preheated oven at 180Β°C for 20 minutes
