Brazilian Corn and Cheese Cake

Ingredients

  • 3 eggs
  • 100ml corn or sunflower oil
  • 200ml coconut milk
  • 50g butter
  • 50g grated parmesan cheese
  • 1.5 cups sugar
  • 1 cup cornmeal
  • 1 cup cooked corn
  • 3 tablespoons all-purpose flour or gluten-free flour
  • 1 tablespoon baking powder

Preparation

  1. Place eggs, corn or sunflower oil, coconut milk, butter, grated parmesan cheese, sugar, cornmeal, and cooked corn in a blender in the order listed and blend for 3 to 5 minutes

  2. Stop the blender and add all-purpose flour or gluten-free flour and baking powder

  3. Mix gently until just combined

  4. Pour the batter into a greased and floured pan

  5. Bake in a preheated medium oven for approximately 20 minutes or until set and golden brown

  6. Remove from the oven and let cool on a wire rack for 10 minutes

  7. Remove from the pan and serve warm
