Brazilian Corn and Cheese Cake
Ingredients
- 3 eggs
- 100ml corn or sunflower oil
- 200ml coconut milk
- 50g butter
- 50g grated parmesan cheese
- 1.5 cups sugar
- 1 cup cornmeal
- 1 cup cooked corn
- 3 tablespoons all-purpose flour or gluten-free flour
- 1 tablespoon baking powder
Preparation
Place eggs, corn or sunflower oil, coconut milk, butter, grated parmesan cheese, sugar, cornmeal, and cooked corn in a blender in the order listed and blend for 3 to 5 minutes
Stop the blender and add all-purpose flour or gluten-free flour and baking powder
Mix gently until just combined
Pour the batter into a greased and floured pan
Bake in a preheated medium oven for approximately 20 minutes or until set and golden brown
Remove from the oven and let cool on a wire rack for 10 minutes
Remove from the pan and serve warm
