Cherry Bakewell Rice Pudding for Breakfast

Ingredients

  • 1.5 tablespoons morello cherry compote
  • 1 tablespoon raspberry coulis
  • 85 grams pudding rice
  • 100 milliliters 1% milk
  • cold water to total 450 milliliters liquid
  • Stevia drops
  • Moroccan almond extract
  • cherry flavouring

Topping

  • 2 mini shortbreads
  • 0.5 glacé cherry

Preparation

  1. Combine rice, milk, water, cherry compote, raspberry coulis, Stevia drops, Moroccan almond extract, and cherry flavouring in a pot

  2. Cook on hob for 30 minutes until thick and gloopy

  3. Crush shortbreads and sprinkle around the edge

  4. Top with half a glacé cherry
