Cookie Dough Cups

Ingredients

  • 1 can Chickpeas washed and drained (420g)
  • 1/4 cup Peanut Butter
  • 1/4 cup sweetener
  • 1/2 cup protein powder
  • 1/3 cup choc chips
  • 80g dark chocolate
  • 1tsp coconut oil

Preparation

  1. Blend ingredients for the cookie dough (except choc chips), once a smooth and thick dough is formed, fold in the choc chips

  2. Melt 60g of the chocolate and lime muffin cases

  3. Put in the fridge to set

  4. Fill each cup with cookie dough and top with remaining melted chocolate

  5. Leave in the fridge for at least 1 hour to set

  6. Store in the fridge and eat within 5 days
