Easy Healthy Pumpkin Bars

Ingredients

  • 150 g pumpkin
  • 70 g coconut blossom sugar (or alternative sweeteners like date syrup, Xylitol, or Erythritol)
  • 1 tsp pumpkin spice or gingerbread spice
  • 200 g oat flour
  • 40 g coconut oil
  • 30 g protein powder (optional)
  • 70 g dark chocolate

Preparation

  1. Cook the pumpkin in a pot until tender. Drain and blend it in a mixer until smooth.

  2. In a bowl, add the hot pumpkin puree and coconut oil. Stir to combine.

  3. Add the rest of the ingredients to the bowl and mix well.

  4. Line a small plastic container with plastic wrap and press the mixture evenly into the container, forming a layer about 1.5 cm thick.

  5. Melt the dark chocolate and spread it as a layer over the entire oat mixture.

  6. Place the container in the freezer for 1 hour to set.

  7. Remove from the freezer and cut the mixture into 8 or 16 bars.

  8. Store the pumpkin bars in the refrigerator and serve chilled.
