Easy Healthy Pumpkin Bars
Ingredients
- 150 g pumpkin
- 70 g coconut blossom sugar (or alternative sweeteners like date syrup, Xylitol, or Erythritol)
- 1 tsp pumpkin spice or gingerbread spice
- 200 g oat flour
- 40 g coconut oil
- 30 g protein powder (optional)
- 70 g dark chocolate
Preparation
Cook the pumpkin in a pot until tender. Drain and blend it in a mixer until smooth.
In a bowl, add the hot pumpkin puree and coconut oil. Stir to combine.
Add the rest of the ingredients to the bowl and mix well.
Line a small plastic container with plastic wrap and press the mixture evenly into the container, forming a layer about 1.5 cm thick.
Melt the dark chocolate and spread it as a layer over the entire oat mixture.
Place the container in the freezer for 1 hour to set.
Remove from the freezer and cut the mixture into 8 or 16 bars.
Store the pumpkin bars in the refrigerator and serve chilled.
