Gluten-Free Chocolate Coconut Sugar Cookies

Ingredients

  • 1 cup rice flour
  • 1/4 cup grated coconut (can be replaced by normal flour)
  • 2/3 cup coconut sugar (or muscovado)
  • 1/3 cup coconut oil
  • 1/4 cup lukewarm water
  • choco chips
  • pinch of salt
  • pinch of baking powder

Preparation

  1. Mix all the dry ingredients and set them aside.

  2. In another bowl, mix the sugar and the melted coconut oil until it’s completely liquid.

  3. Fold in the choco chips and mix gently.

  4. Combine both bowls into one and form the cookies shaping them with your hands.

  5. Line them up in a baking tray with baking paper or a bit of oil and bake for 15 minutes.

  6. Leave them for an extra 5 minutes so they get crunchy.
