Gluten-Free Pop-Tarts
Ingredients
- 1 1/2 cups gluten-free all-purpose flour (e.g., Bob's Red Mill 1:1 baking flour)
- 1 teaspoon baking powder
- 1 1/4 cups Greek yogurt
- Jam, for filling
Topping
- Butter, melted for brushing
- Vanilla frosting (e.g., Miss Jones), for topping
- Beet powder, for coloring frosting
- Sprinkles, for topping
Preparation
Preheat the oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, whisk together the flour and baking powder, then stir in the yogurt to form a dough.
Roll out the dough on a lightly floured surface and use a circle cookie cutter to cut out 14 circles.
Place 1 to 1.5 teaspoons of jam in the center of 7 circles, then top with the remaining 7 circles and press the edges together with a fork.
Brush the tops with melted butter and bake for 18 to 20 minutes or until golden.
Topping suggestion
After baking, top with a mixture of vanilla frosting and beet powder, and add sprinkles for decoration.
