Healthy Overnight Oats with Vanilla and Cauliflower

Ingredients

  • 1/2 cup gluten-free oats
  • 1/2 cup cauliflower rice
  • 1 spoon chia seeds
  • 1/2 mashed banana
  • 1 scoop vanilla protein powder
  • 1 cup almond milk
  • Pinch of salt
  • Fig (for topping)
  • Raspberries (for topping)
  • Pomegranate (for topping)
  • Peanut butter (for topping)

Preparation

  1. Boil the almond milk first.

  2. Add the oats and chia seeds.

  3. Add the banana and salt.

  4. Stir until thick.

  5. Remove from heat and stir in the vanilla protein powder.

  6. Refrigerate overnight to achieve a thick and cakey texture.

  7. Top with fig, raspberries, pomegranate, and peanut butter before serving.
