Vanilla Matcha Cauliflower Oats

Ingredients

  • 1/2 cup gluten-free oats
  • 1/2 cup frozen cauliflower rice
  • 1 teaspoon matcha powder
  • 1 sachet vanilla protein powder
  • 1 date, chopped
  • Pinch of salt
  • Almond milk

Toppings

  • Frozen raspberries
  • Pomegranate seeds
  • Peanut butter
  • Bee pollen

Preparation

  1. In a bowl, combine the oats, cauliflower rice, matcha powder, vanilla protein powder, chopped date, salt, and almond milk. Mix well.

  2. Refrigerate and let soak for at least a few hours or overnight.

  3. Before serving, top with frozen raspberries, pomegranate seeds, peanut butter, and bee pollen.
