Vanilla Matcha Cauliflower Oats

Ingredients

  • 1/2 cup gluten-free oats
  • 1/2 cup frozen cauliflower rice
  • Splash of almond milk
  • 1/2 teaspoon matcha
  • 1 spoon vanilla protein

Toppings

  • frozen raspberries
  • dried fig
  • deep roast nut butter

Preparation

  1. Soak the oats overnight or for several hours until soft

  2. Mix the soaked oats with frozen cauliflower rice, matcha powder, vanilla protein, and a splash of almond milk until well combined

  3. Add the toppings and serve cold or at room temperature
