Malaysian Pumpkin Kuih

Ingredients

Dough

  • Boiled and mashed pumpkin
  • 2 to 3 cups glutinous rice flour
  • Small amount of water
  • Pinch of salt

Filling

  • 2 blocks palm sugar
  • Water
  • Pandan leaves
  • 1 grated coconut
  • 3 tablespoons sugar

Coconut milk mixture

  • 1 box coconut milk
  • 2 cups water
  • 1 to 2 cups rice flour
  • Pinch of salt

Preparation

  1. Boil the pumpkin halfway with a pinch of salt until soft, then mash it.

  2. Mix the mashed pumpkin with 2 to 3 cups glutinous rice flour, a small amount of water, and a pinch of salt to form a dough.

  3. Cook 2 blocks of palm sugar with water, add pandan leaves, then stir in 1 grated coconut and 3 tablespoons of sugar, and cook until dry.

  4. Combine 1 box of coconut milk, 2 cups water, 1 to 2 cups rice flour, and a pinch of salt, then cook on low heat.

  5. Form the dough into shapes, fill with the prepared filling, and steam until cooked.
