Malaysian Pumpkin Kuih
Ingredients
Dough
- Boiled and mashed pumpkin
- 2 to 3 cups glutinous rice flour
- Small amount of water
- Pinch of salt
Filling
- 2 blocks palm sugar
- Water
- Pandan leaves
- 1 grated coconut
- 3 tablespoons sugar
Coconut milk mixture
- 1 box coconut milk
- 2 cups water
- 1 to 2 cups rice flour
- Pinch of salt
Preparation
Boil the pumpkin halfway with a pinch of salt until soft, then mash it.
Mix the mashed pumpkin with 2 to 3 cups glutinous rice flour, a small amount of water, and a pinch of salt to form a dough.
Cook 2 blocks of palm sugar with water, add pandan leaves, then stir in 1 grated coconut and 3 tablespoons of sugar, and cook until dry.
Combine 1 box of coconut milk, 2 cups water, 1 to 2 cups rice flour, and a pinch of salt, then cook on low heat.
Form the dough into shapes, fill with the prepared filling, and steam until cooked.
