Mini Zucchini Puddings with Orange Zest

Ingredients

  • 350g sliced zucchini
  • 3 eggs
  • 150g buckwheat flour
  • 80g xylitol, stevia, or brown sugar
  • 1/2 cup nuts, optional
  • 1 tablespoon baking powder
  • orange zest to taste

Preparation

  1. Preheat the oven to 180C.

  2. Beat all ingredients together, adding the nuts last.

  3. Transfer the mixture to a pudding mold.

  4. Bake for 30 minutes.

Tips

  1. Try adding dulce de leche in the center for a delicious variation.
