Mini Zucchini Puddings with Orange Zest
Ingredients
- 350g sliced zucchini
- 3 eggs
- 150g buckwheat flour
- 80g xylitol, stevia, or brown sugar
- 1/2 cup nuts, optional
- 1 tablespoon baking powder
- orange zest to taste
Preparation
Preheat the oven to 180C.
Beat all ingredients together, adding the nuts last.
Transfer the mixture to a pudding mold.
Bake for 30 minutes.
Tips
Try adding dulce de leche in the center for a delicious variation.
