Baked Potato with Egg and Masala Mayo

Ingredients

  • Albert Bartlett butter gold potatoes
  • Olive oil
  • Sea salt
  • Butter
  • Eggs
  • Mayonnaise
  • Critical masala sauce
  • Double Gloucester cheese

Salad components

  • Lambs lettuce
  • Red onion
  • Baby peppers
  • Chili
  • Radishes

Preparation

  1. Prick the potato skins with a fork and rub with olive oil and sea salt.

  2. Bake in a preheated oven at 185°C fan for 1 hour and 15 minutes, then increase to 220°C for 10 minutes and turn occasionally.

  3. Slice the baked potato down the middle and add a few cubes of butter.

  4. Boil eggs for 9 minutes in boiling water.

  5. Mix mayonnaise with critical masala sauce.

  6. Grate double Gloucester cheese and add it to the potato filling.

  7. Prepare a salad with lambs lettuce, red onion, baby peppers, chili, and radishes and serve on the side.
