Baked Apple Cinnamon Oatmeal

Ingredients

  • 200g oats
  • 3 apples
  • Approximately 250ml warm liquid (water or plant-based milk)
  • 100-150ml vanilla yoghurt
  • Cinnamon
  • 1-3 tablespoons peanut butter
  • 2-3 tablespoons stevia, syrup, or dates
  • Margarine or oil
  • Vanilla powder
  • Cardamom
  • Pinch of salt
  • 2 tablespoons chia seeds (optional)
  • Coconut oil or margarine (optional)

Preparation

  1. Preheat oven to 180°C

  2. Chop the apples into pieces and fry in margarine with cinnamon and vanilla powder

  3. Mix together oats, chia seeds, cinnamon, cardamom, a pinch of salt, stevia, peanut butter, and yoghurt in a baking bowl and add three-quarters of the fried apples

  4. Mix until combined

  5. Place the mixture in a baking tray or individual jars

  6. Bake in the oven for 20-25 minutes at 180°C and once baked, top with extra apples and vanilla yoghurt
