Chocolate Quinoa Pudding with Antioxidants and Protein
Ingredients
- 1 cup uncooked white quinoa
- 1 cup unsweetened almond milk (plus more for serving)
- 1 cup coconut milk (light canned, or the beverage in a carton)
- 1 pinch sea salt
- 2 Tbsp unsweetened cocoa powder
- 2-3 Tbsp maple syrup or coconut sugar
- 1/2 tsp pure vanilla extract (optional)
- 3-4 squares vegan dark chocolate or cacao nibs
Preparation
Rinse the quinoa in a strainer.
Heat the quinoa in a pan over medium heat for 3 minutes to toast.
Add the almond milk, coconut milk, and a pinch of salt.
Cook for 20-25 minutes until the quinoa is tender and all liquid is absorbed.
Remove from heat and stir in the cocoa powder and maple syrup.
Serve with additional milk, vegan dark chocolate or cacao nibs, fresh fruits, and nut butter if desired.
