One-Pot Cozy Turmeric Porridge

Ingredients

  • 1 cup steel cut oats
  • 1 pinch sea salt (optional)
  • 1 tsp apple cider vinegar (optional)
  • Water to cover

Cooking additions

  • 1.5 cups water
  • 0.5 cup coconut milk (canned)
  • 1.5-2 tsp Golden Milk Mix
  • 2-3 Tbsp maple syrup or stevia to taste

Toppings

  • Pomegranate arils
  • Coconut butter
  • Cashew butter

Preparation

  1. Soak the steel cut oats with sea salt (optional) and apple cider vinegar (optional) in water to cover overnight or for at least 6 hours.

  2. Drain and rinse the soaked oats.

  3. Combine the drained oats with 1.5 cups water, 0.5 cup coconut milk, and 1.5-2 tsp Golden Milk Mix in a pot.

  4. Bring to a boil, then reduce heat and simmer until the porridge is creamy and oats are tender, about 20-30 minutes.

  5. Stir in 2-3 Tbsp maple syrup or sweeten with stevia to taste.

  6. Serve hot with pomegranate arils, coconut butter, and cashew butter.
