One-Pot Cozy Turmeric Porridge
Ingredients
- 1 cup steel cut oats
- 1 pinch sea salt (optional)
- 1 tsp apple cider vinegar (optional)
- Water to cover
Cooking additions
- 1.5 cups water
- 0.5 cup coconut milk (canned)
- 1.5-2 tsp Golden Milk Mix
- 2-3 Tbsp maple syrup or stevia to taste
Toppings
- Pomegranate arils
- Coconut butter
- Cashew butter
Preparation
Soak the steel cut oats with sea salt (optional) and apple cider vinegar (optional) in water to cover overnight or for at least 6 hours.
Drain and rinse the soaked oats.
Combine the drained oats with 1.5 cups water, 0.5 cup coconut milk, and 1.5-2 tsp Golden Milk Mix in a pot.
Bring to a boil, then reduce heat and simmer until the porridge is creamy and oats are tender, about 20-30 minutes.
Stir in 2-3 Tbsp maple syrup or sweeten with stevia to taste.
Serve hot with pomegranate arils, coconut butter, and cashew butter.
