Grilled Peaches with Oat Crumble

Ingredients

  • 3 peaches, pitted and halved
  • 2 tbsp olive oil
  • Vanilla ice cream, for serving

Oat crumble topping

  • 1/2 cup rolled oats
  • 2 tbsp brown sugar
  • 1/4 tsp ground cinnamon
  • 4 tbsp unsalted butter, melted
  • 1 tbsp all-purpose flour

Preparation

  1. Mix together all ingredients for the oat crumble topping until combined, then spread in an even layer on a baking sheet. Broil for 5-6 minutes or until bubbly and golden brown. Set aside to cool and harden for about 10-15 minutes.

  2. Preheat grill or grill pan to medium high heat and add 2 tbsp olive oil. Grill peaches for 3-4 minutes until char marks appear, then flip and grill another 3-4 minutes.

  3. Remove from the grill and top each peach with vanilla ice cream, a drizzle of olive oil, a pinch of sea salt, and the oat crumble topping. Enjoy.
