Grilled Peaches with Oat Crumble
Ingredients
- 3 peaches, pitted and halved
- 2 tbsp olive oil
- Vanilla ice cream, for serving
Oat crumble topping
- 1/2 cup rolled oats
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 4 tbsp unsalted butter, melted
- 1 tbsp all-purpose flour
Preparation
Mix together all ingredients for the oat crumble topping until combined, then spread in an even layer on a baking sheet. Broil for 5-6 minutes or until bubbly and golden brown. Set aside to cool and harden for about 10-15 minutes.
Preheat grill or grill pan to medium high heat and add 2 tbsp olive oil. Grill peaches for 3-4 minutes until char marks appear, then flip and grill another 3-4 minutes.
Remove from the grill and top each peach with vanilla ice cream, a drizzle of olive oil, a pinch of sea salt, and the oat crumble topping. Enjoy.
