Grilled Peach and Stracciatella Spelt Salad
Ingredients
- 200g italian spelt
- 1 avocado
- 200g green beans
- 3-4 peaches
- 1 container stracciatella
- Handfuls of rocket
- 1 tbsp olive oil
- 1-2 tbsp aged balsamic vinegar
- 1/2 a lemon, juiced
- Fresh basil
Preparation
Slice the peaches and grill them until charred, about 3 minutes per side.
Cook the spelt and let it cool.
Blanch the green beans for 3 minutes in hot water and then plunge them in ice water.
Drain and dry the green beans, then add them to a big bowl along with chopped avocado, cooked and cooled spelt, and rocket.
Season the mixture and drizzle with olive oil, balsamic vinegar, and a squeeze of lemon.
Place the mixture on a large plate, dot with grilled peaches and stracciatella, and finish with fresh basil.
