Scrambled Pancakes with Fruit Toppings
Ingredients
- 1 cup pancake mix (e.g., Krusteaz)
- 2/3 cup cold water
- 1/4 teaspoon vanilla extract (optional)
Toppings
- Fresh blackberries, for topping
- Fresh strawberries, for topping
- Powdered sugar, for topping
- Maple syrup, for topping
Preparation
In a medium mixing bowl, combine the pancake mix, water, and vanilla extract (if using). Stir until just combined; avoid overmixing to keep the pancakes fluffy.
Heat a non-stick skillet over medium heat and add butter. Once the butter is hot, pour in the pancake batter. Let it sit undisturbed for 2-3 minutes.
Using a spatula, scramble the pancake batter in the skillet, breaking it into pieces as it cooks. Continue cooking until the pancake pieces are cooked through and golden brown, about 4-5 minutes.
Serve topped with fresh blackberries, strawberries, powdered sugar, and syrup. Enjoy!
