Sweet Potato Pancakes

Ingredients

  • 1.5 cups oat flour (you can blend regular oats to create flour)
  • 1 cup almond milk (or nondairy milk of choice)
  • 3/4 cup sweet potato purée
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 3/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 tsp baking soda

Preparation

  1. Add all ingredients into a high-speed blender and run until smooth

  2. Allow it to sit for 5 minutes, and in the meantime, preheat a skillet over medium heat

  3. Add batter into skillet, 1/3 cup at a time, and fill with as many pancakes as you can comfortably fit

  4. Cook on each side on medium-low heat for about 3 minutes

  5. Flip when the center starts to bubble

  6. Place cooked pancakes onto a clean plate which you can keep warm in the oven at its lowest setting

  7. Complete with the remaining batter

  8. To serve, top the pancakes with anything you’d like: nut butters, syrup, fresh fruit, etc
