Easy Vegan Tofu Scramble Breakfast

Ingredients

  • 1/2 block of tofu
  • 1 tablespoon red onion
  • 1/4 bell pepper
  • small amount of broccoli
  • handful of spinach
  • 2 sun-dried tomatoes
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ginger
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon paprika
  • 1/2 teaspoon vegetable bouillon or stock cube
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon tomato purée

Preparation

  1. Heat a pan with oil over medium heat

  2. Add red onion and bell pepper, sauté until softened

  3. Crumble the tofu and add it to the pan with broccoli, spinach, and sun-dried tomatoes

  4. Stir in turmeric, ginger, lemon juice, paprika, vegetable bouillon, chili powder, garlic powder, and tomato purée. Cook until heated through and well combined
