Easy Vegan Tofu Scramble Breakfast
Ingredients
- 1/2 block of tofu
- 1 tablespoon red onion
- 1/4 bell pepper
- small amount of broccoli
- handful of spinach
- 2 sun-dried tomatoes
- 1/2 teaspoon turmeric
- 1/2 teaspoon ginger
- 1/2 teaspoon lemon juice
- 1/2 teaspoon paprika
- 1/2 teaspoon vegetable bouillon or stock cube
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon tomato purée
Preparation
Heat a pan with oil over medium heat
Add red onion and bell pepper, sauté until softened
Crumble the tofu and add it to the pan with broccoli, spinach, and sun-dried tomatoes
Stir in turmeric, ginger, lemon juice, paprika, vegetable bouillon, chili powder, garlic powder, and tomato purée. Cook until heated through and well combined
