Arabic Safiha Meat-Stuffed Flatbread
Ingredients
Dough
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon instant yeast
- 1/4 teaspoon baking powder
- 3/4 cup warm water
- 2 tablespoons corn oil
Filling
- 300 grams ground meat
- 1 small onion
- 1 cup parsley leaves
- 1 medium tomato
- 2 tablespoons olive oil
- 1/2 teaspoon mixed spices
- 1/2 teaspoon paprika
- 1/2 teaspoon crushed chili
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mozzarella or halloumi cheese
For serving
- Paprika or hot pepper
Preparation
In a bowl, place the flour, salt, sugar, yeast, and baking powder and stir to mix.
Add the warm water and corn oil and knead all the ingredients to form a smooth, homogeneous dough.
Divide the dough into 8 pieces, shape each into a ball, cover, and let rise in a warm place until doubled in size.
On a floured surface, use a rolling pin to roll out each piece to about 9 inches and let it rest for a few minutes.
Spread a thin layer of filling on the dough and sprinkle some cheese.
Heat a large skillet, place the flatbread in it, cover, and cook for a few minutes until the bottom is browned and the meat is cooked, then sprinkle with paprika or chili and transfer to a serving plate.
Repeat with the remaining dough pieces, stack them, cover with a light towel to keep them soft, and serve hot.
