Arabic Safiha Meat-Stuffed Flatbread

Ingredients

Dough

  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon instant yeast
  • 1/4 teaspoon baking powder
  • 3/4 cup warm water
  • 2 tablespoons corn oil

Filling

  • 300 grams ground meat
  • 1 small onion
  • 1 cup parsley leaves
  • 1 medium tomato
  • 2 tablespoons olive oil
  • 1/2 teaspoon mixed spices
  • 1/2 teaspoon paprika
  • 1/2 teaspoon crushed chili
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mozzarella or halloumi cheese

For serving

  • Paprika or hot pepper

Preparation

  1. In a bowl, place the flour, salt, sugar, yeast, and baking powder and stir to mix.

  2. Add the warm water and corn oil and knead all the ingredients to form a smooth, homogeneous dough.

  3. Divide the dough into 8 pieces, shape each into a ball, cover, and let rise in a warm place until doubled in size.

  4. On a floured surface, use a rolling pin to roll out each piece to about 9 inches and let it rest for a few minutes.

  5. Spread a thin layer of filling on the dough and sprinkle some cheese.

  6. Heat a large skillet, place the flatbread in it, cover, and cook for a few minutes until the bottom is browned and the meat is cooked, then sprinkle with paprika or chili and transfer to a serving plate.

  7. Repeat with the remaining dough pieces, stack them, cover with a light towel to keep them soft, and serve hot.
