Indonesian Steamed Sour Chicken

Ingredients

  • 1 whole free-range chicken
  • 10 shallots
  • 5 cloves garlic
  • 3 curly red chilies
  • 5 bird's eye chilies
  • 1 tomato
  • 2 tamarind slices (or substitute with bilimbi)
  • 3 stalks lemongrass
  • 2 bay leaves
  • Diluted coconut milk, as needed
  • Banana leaves, as needed
  • Salt, to taste

Preparation

  1. Slice all ingredients except lemongrass, chilies, and bay leaves, then set aside.

  2. Heat the steamer and prepare a container for steaming the chicken.

  3. Line the container with banana leaves, arrange the chicken and all spices, add salt and pour in the diluted coconut milk, then cover with banana leaves.

  4. Steam until the chicken is cooked, about 1 hour.

Notes

  1. This dish is healthy because it uses no oil and is steamed. It is easy to prepare and can be modified with available ingredients.
