Indonesian Steamed Mackerel Pepes

Ingredients

  • 3 large mackerel fish
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • banana leaves for wrapping
  • bamboo skewers as needed
  • 2 tablespoons tamarind juice

Spice paste

  • 20 shallots
  • 7 cloves garlic
  • 20 curly red chilies
  • 20 bird's eye chilies (optional)
  • 6 roasted candlenuts
  • 1 piece turmeric
  • 1 piece ginger

Additional

  • 3 stalks lemongrass
  • 1 bunch basil leaves
  • 1 stalk green onion
  • 2 tomatoes
  • 2 tablespoons cooking oil

Preparation

  1. Grind the spice paste ingredients into a fine paste.

  2. Marinate the fish with lime juice and salt for 20 minutes and set aside.

  3. Mix the ground spice paste with lemongrass, basil leaves, green onion, tomatoes, cooking oil, and tamarind juice, then divide the mixture into three equal parts.

  4. Take a banana leaf, place one fish and one part of the spice mixture on it, wrap it, and secure with bamboo skewers, repeating until all fish and spices are used.

  5. Heat the steamer, place the wrapped fish in the steamer, steam for 30 minutes, then remove and serve.
