Malaysian Mackerel Fish Curry

Ingredients

  • 1/2 onion
  • 5 cloves garlic
  • 1 inch ginger
  • 3 tablespoons ground chili
  • 3 sprigs curry leaves
  • 1 tablespoon mustard seeds
  • Coarse spices
  • 5 tablespoons fish curry powder
  • 5 pieces mackerel fish
  • Okra
  • Eggplant
  • Tomato
  • 2 tamarind slices
  • Water as needed
  • Coconut milk
  • Sugar
  • Salt

Preparation

  1. Heat a wok with a little oil.

  2. Add curry leaves and mustard seeds and sauté briefly.

  3. Add coarse spices, onion, garlic, and sliced ginger. Sauté until wilted.

  4. Add ground chili and sauté until oil separates.

  5. Then, add fish curry powder and a little water. Sauté until oil separates.

  6. Add a little water and eggplant. Let it sit for a moment.

  7. Add okra and mackerel fish.

  8. Add coconut milk and tomato.

  9. Season to taste.

  10. Ready to serve.
