Simple Creamy Chicken Pie with Herbed Crust
Ingredients
Filling
- shredded chicken
- finely chopped onion
- creamy cheese spread
- small diced tomatoes, seeds included
- optional: palm heart, olives, grated carrot, corn, peas, etc.
Dough
- 1 cup milk
- 3 eggs
- 1/2 cup mayonnaise
- 5 tablespoons oil (or olive oil)
- 1/2 cup shredded mozzarella cheese
- a pinch of salt
- 2 cups all-purpose flour
- 1 tablespoon baking powder
Preparation
Dough
Blend milk, eggs, mayonnaise, oil, mozzarella cheese, and salt until smooth
Add flour and baking powder, and mix with a spoon until combined
Blend briefly until just incorporated, being careful not to overmix
Assembly
Pour half of the batter into a greased and floured pie pan
Spread the chicken filling evenly over the batter
Dollop creamy cheese spread (requeijΓ£o or catupiry) over the filling
Sprinkle shredded mozzarella cheese over the creamy cheese
Pour the remaining batter over the top, spreading evenly with a spatula
Sprinkle with herbs or oregano
Baking
Bake in a preheated 200Β°C (400Β°F) oven for about 1 hour or until golden brown
