Simple Creamy Chicken Pie with Herbed Crust

Ingredients

Filling

  • shredded chicken
  • finely chopped onion
  • creamy cheese spread
  • small diced tomatoes, seeds included
  • optional: palm heart, olives, grated carrot, corn, peas, etc.

Dough

  • 1 cup milk
  • 3 eggs
  • 1/2 cup mayonnaise
  • 5 tablespoons oil (or olive oil)
  • 1/2 cup shredded mozzarella cheese
  • a pinch of salt
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

Preparation

Dough

  1. Blend milk, eggs, mayonnaise, oil, mozzarella cheese, and salt until smooth

  2. Add flour and baking powder, and mix with a spoon until combined

  3. Blend briefly until just incorporated, being careful not to overmix

Assembly

  1. Pour half of the batter into a greased and floured pie pan

  2. Spread the chicken filling evenly over the batter

  3. Dollop creamy cheese spread (requeijΓ£o or catupiry) over the filling

  4. Sprinkle shredded mozzarella cheese over the creamy cheese

  5. Pour the remaining batter over the top, spreading evenly with a spatula

  6. Sprinkle with herbs or oregano

Baking

  1. Bake in a preheated 200Β°C (400Β°F) oven for about 1 hour or until golden brown
