Single Serve Giant Protein Mince Pie Skillet

Ingredients

Dough

  • 50g soy unsweetened yogurt
  • 60g spelt flour
  • 20g vanilla soy isolate
  • 2 tbsp water
  • some baking powder
  • some salt
  • squeeze of a lemon

Filling

  • 100g chopped apple
  • 20g raisins
  • 80ml almond milk
  • 5ml agave nectar
  • sprinkle cinnamon
  • sprinkle nutmeg
  • sprinkle ginger

Preparation

  1. Preheat oven to 180°C

  2. Mix the dough ingredients all together, roll out and cut a star to be placed aside.

  3. Use the remaining dough to form the base of the mince pie that you can mould into your skillet or small baking pan.

  4. To make the filling, pour the almond milk in the pot with the remaining ingredients and let it stew until the liquid is absorbed.

  5. Place the filling onto the mince pie base and top with the star.

  6. Pop it in the preheated oven for 15 minutes.

  7. Serve by itself or with some ice cream.
