Mince Pie Cauliflower Oats Delight

Ingredients

  • 60g oats
  • 30g vanilla soy protein powder
  • 1/2 bag original cauliflower rice
  • 5g chia seeds
  • cinnamon
  • ginger
  • nutmeg
  • all spice
  • 180-200ml almond milk

Mince pie mixture

  • 30g spelt flour
  • 10g soy isolate
  • 25g unsweetened soy yogurt
  • 1 tablespoon
  • 50ml almond milk
  • cinnamon
  • nutmeg
  • ginger
  • allspice
  • 1 teaspoon agave nectar
  • 80g chopped apple
  • 15g raisins

Preparation

  1. Mix all oats ingredients in a pot until desired consistency is reached.

  2. Mix 30g spelt flour, 10g soy isolate, 25g unsweetened soy yogurt, and 1 tablespoon together to make the pastry dough.

  3. Roll out the dough, cut out a mini star, and mould the remaining into a non-stick cupcake tray to form the base.

  4. In a pot, mix 50ml almond milk, cinnamon, nutmeg, ginger, allspice, 1 teaspoon agave nectar, 80g chopped apple, and 15g raisins; stew until all liquid is absorbed.

  5. Place the filling on the base and top with the star cutout.

  6. Save some of the filling to mix with the oats mixture.

  7. Bake the assembled mince pie in the oven at 180°C for 15-20 minutes.

  8. Remove from oven and place the mince pie on top of the oats mixture.
