Spicy Broccoli and Veggie Salad with Coconut Rice
Ingredients
Spicy broccoli
- 1 head of organic broccoli
- 1/2 cup water
- 3 tbsp tamari
- 1 tbsp garlic powder
- 1 tbsp red chili flakes
- 1 tbsp pepper
Coconut rice
- 1 cup white jasmine rice
- 1 can of light coconut milk
- 1/2 cup water
Salad
- 2 handfuls of spinach
- grape tomatoes
- cucumber
- avocado
- pecans
- olive oil + balsamic dressing
Preparation
Add the chopped up broccoli to a pan with water and tamari, bring to a boil put lid on.
Let the broccoli steam and get softer and light green in color.
Once most of the water is absorbed add spices and mix well.
Remove lid and flash fry to remove all water.
Place all ingredients for coconut rice into a pot and bring to a boil.
Once boiling for coconut rice, place lid and cook for 15-20 minutes till rice is fluffy.
Mix all salad ingredients together and serve.
Make coconut rice in large quantities for reuse in other meals.
The spicy broccoli and salad are quick to prepare, taking minimal time.
