Stir-Fried Chicken Liver and Gizzard

Ingredients

  • Chicken liver and gizzard, cleaned
  • Shallots
  • Garlic
  • Coriander seeds
  • Ginger
  • Turmeric
  • Lime leaves
  • Bay leaves
  • Lemongrass
  • Salt to taste
  • Sugar to taste
  • Bird's eye chilies
  • Oyster sauce
  • Lime juice (optional)

Preparation

  1. Prepare a pan, add the braising spices and water, then braise the chicken liver and gizzard until cooked and tender.

  2. Cut the braised liver and gizzard into pieces and fry until dry or semi-dry as desired.

  3. Slice the stir-fry spices including shallots, garlic, and bird's eye chilies.

  4. Sauté the sliced stir-fry spices, then add salt, sugar, and oyster sauce.

  5. Add a little water and the fried liver and gizzard, cook until the spices are absorbed.

  6. If desired, add lime juice and serve.
