Arabic Pistachio Ghriba Cookies

Ingredients

  • 3/4 cup melted butter
  • 1/4 cup corn oil
  • 1 cup powdered sugar
  • 1/2 cup flour
  • 1/2 cup very fine pistachio

For decoration

  • whole pistachio

Preparation

  1. Position the wire rack in the middle of the oven and preheat the oven to 180°C

  2. Get short-edged trays and line them with parchment paper

  3. In the mixer bowl, put the butter, oil, and sugar, attach the beater, and mix on medium speed for 3 to 4 minutes until the mixture is light in color

  4. Add the flour and pistachio, then mix on medium speed until a smooth and slightly soft dough forms

  5. Take a walnut-sized amount of dough, shape it into a smooth ball, dip the end in pistachio, and place it on the tray, repeating with the remaining dough and leaving a small space between the balls

  6. Bake the cookies for 8 to 10 minutes until the bottom is golden brown, then allow them to cool completely before serving
